JEFFERSON’S OCEAN AGED AT SEA BOURBON VOYAGE 28 | 90 PROOF | CRESTWOOD, KY | $20

The constant movement of the ocean and extreme temperature fluctuations as the ship traversed the sea completely transformed the whiskey. The result is a hyper-aged, darker, richer and caramelized bourbon with incredible depth and complexity.

OCEAN Voyage 28 made another long run off the Baja Peninsula, through the Tropic of Cancer and down the coast of Central America. The air was hot and heavy with moisture. Rain would have been a relief but it never came. Our transit back through the Panama Canal was swift and smooth and while it remained hot and sticky, our final days through the Caribbean and up the Atlantic coast were smooth and clear. The humidity, dramatic swings in temperature and ever-changing sea conditions had the effect of bringing balance and richness to the complex array of flavors and tastes you will find in OCEAN Voyage 28.

JEFFERSON’S OCEAN AGED AT SEA WHEATED BOURBON VOYAGE 29 | 90 PROOF | $21

Jefferson’s Ocean Aged at Sea is fully matured for at least four years, then placed in rickhouses on ships to travel the globe which hyper-ages the bourbon. The constant agitation, weather conditions and sea-salt air impart a flavor like no other bourbon on the market. As wheat is a softer grain than rye, it allows the flavors that are intrinsic of Ocean voyages to be amplified as it will not compete with those flavors as the spice of the rye does.

At the stroke of midnight, the ship carting Jefferson’s OCEAN Aged at Sea° Voyage 29 Wheated used its side-thrusters to move away from the dock and out into the channel that would take it to the Atlantic. The bright lights that illuminated the busy Port of Savannah slowly faded in the distance, revealing a beautiful moonlit sky over a tranquil sea.
A tropical storm southeast of Bermuda stirred up moderate seas that gently agitated the cargo but Voyage 29 avoided sailing directly into the storm en route to Manzanillo and the transit of the Panama Canal.

While there was no tropical depressions or cyclone activity in the eastern Pacific, strong, warm winds provided crystal clear days and nights but generated rough seas that persisted through the western Pacific.

Rounding Australia and traveling into the Indian Ocean, Voyage 29 continued its journey storm-free as the entire region was experiencing well below normal cyclone activity. The high wind and rough seas moderated below the equator as the ship traveled north to Singapore. Long passages of open ocean then gave way to frequent stops in China, Korea and Japan. While a busy time for the ship, the barrels of wheated bourbon aboard, quietly rested in the relatively calm coastal waters before heading out into the north Pacific and crossing to the west coast of America. Air temperatures dropped to the mid 50’s above and below the Port of Long Beach but that was as cold as it got through the entire trip. All in all, it was the perfect voyage for wheated bourbon. Air temperatures and sea conditions provided more contact with the wood and a spike in aging which tends to be slower than with rye whiskeys.

Enjoy the aromas of fresh baked bread, complex notes of vanilla and caramel, delicate hints of citrus and spice and the long, well rounded yet gentle finish of OCEAN Voyage 29 Wheated.

JEFFERSON’S OCEAN AGED AT SEA RYE VOYAGE 26 | 96 PROOF | CRESTWOOD, KY | $20

Barrels of Jefferson’s bourbon travel aboard ships that visit ports all around the globe. The constant motion of the sea churns the whiskey, increasing its interaction with the wood of the barrel. Extreme weather ranging from the coldest of coldest to the warmest of temperatures hyper-ages the liquid in ways no rick house could.

Jefferson’s Ocean Aged at Sea® Rye Whiskey is rye whiskey aged first in #3 char barrels and then double barrel in a split between char #3 and toasted barrels. Jefferson’s OCEAN Rye was then hyper-aged at sea. It was hurricane season as OV26 left the Port of Savannah headed for Manzanillo and the Panama Canal. While the number of named storms that developed in the Atlantic Basin was above normal, fewer than expected attained hurricane status. Seas were slight and the weather was clear to and through the canal. OV26 was off to a quiet start due to a slight weakening of La Nina in the tropical Pacific and warmer than normal surface temperatures in parts of the tropical Atlantic. It was summer above the equator but that would change below the Equator.

En route to New Zealand, surface temperatures dropped significantly in the South Pacific Basin. Sub-surface temperatures had been below average, supporting the cooling of the water at the surface. Relatively weak easterly winds were over-powered by the upper-level westerlies resulting in wind shear that dramatically churned the chilly seas as OCEAN Rye Voyage 26 pushed through to Auckland and on to Brisbane.

Coastal waters off the lee side of Australia went calm until rounding the southern tip of the continent at Melbourne where Voyage 26 again faced rough seas until crossing back above the Equator north of New Guinea. Summer weather had returned. Temperatures were again in the mid to upper 80’s and the seas flattened to Singapore, Korea and Japan. All storm activity was concentrated off Central America where multiple tropical cyclones were blowing simultaneously.

By the time Voyage 26 reached the area, all the storms had blown themselves out and the passage back through the Canal and home to Savannah was smooth with barely a ripple upon the sea.
The constant motion and the dramatic fluctuations in the air temperature caramelizes the sugars in the wood and the salt air permeates the barrels. The final result, rye whiskey that is darker, richer and more caramelized. It is then non-chill filtered, allowing for an even fuller flavor profile bringing you a rye like no other.

The Scotch whisky used in the blend is sourced from several distilleries in Scotland, and the Spanish whisky comes from a well-known sherry producer in Jerez, Spain. This marriage of Scottish and Spanish traditions creates a distinctive flavor profile. What makes Nomad truly unique is its aging process. After blending the Scottish and Spanish whiskies, the blend is transported to Spain and aged in Pedro Ximenez sherry casks for an additional period. This gives Nomad its "outland" character, as it matures outside of Scotland. OLD FORESTER 1920’S STYLE PROHIBITION WHISKEY | 115 PROOF | SHIVELY, KY | $9

The Volstead Act of 1920 which initiated Prohibition in the USA granted permits to six distillers in Kentucky to continue to bottle bourbon for medicinal purposes. Through one of these permits, Old Forester continued to be produced as medicinal whiskey on Louisville’s famed Whiskey Row. It is the only bourbon continuously sold by the same company that has been available for sale before, during and after Prohibition. During this time, all whiskies had to be bottled at 100 Proof. With a barrel entry proof of 100, the “angel’s share” would have created a 115 proof whiskey after maturation. To pay homage to this era, Old Forester presents 1920 Prohibition Style Bourbon at 115 proof to represent the rich flavor profile this bourbon had nearly 100 years ago.

OLD FORESTER 1924 10 YEAR STRAIGHT BOURBON | 100 PROOF | SHIVELY, KY | $70

During Prohibition, more than 200 distilleries were forced to close. Old Forester, however, continued operations because the federal government issued us one of six medicinal licenses, P-3. In 1924, Old Forester acquired barrels from closed distillers, with different mash bills, and bottled that liquid as Old Forester. This release commemorates that moment in time.

One of the oldest bourbon brands in the United States, dating back to 1870. Old Forester has an intriguing connection to history, especially during Prohibition. Each release in The Vaults collection is highlighted by bold flavors including those imparted by the specific wood in which it was finished; a different wood every year harvested from various regions and with different amounts of air-seasoning to the staves the casks are raised from. The Vaults 2023’s finishing barrels were made from Chinquapin Oak staves harvested from trees grown on a limestone-rich shelf in Northern Kentucky and air-seasoned for at least 48 months, withstanding the often dramatic shifts in weather conditions typical of the mid-South.
